I wanted to add a raw cookie recipe to the mix, and as soon as I saw these beautiful raw Coconut-Lemon Meltaways at Addicted to Veggies, I knew they were the ones. This is kind of raw foods recipe I love best: no niche ingredients or special equipment needed; just organic, raw ingredients.
The recipe calls for almond flour, which can be easily made by pulsing dry raw almonds in your food processor until they are a fine crumb. Just be careful not to overprocess, because then you’ll have almond butter. The same is true for the coconut flour.
