

Powdery white on the outside and flecked with pale green on the inside, this pistachio variation on the Mexican Wedding Cookie or Russian Tea Cakes recipe is just perfect for the holidays.
Snowballs
makes 3 dozen
1 cup margarine, softened to room temperature
3/4 cup sifted powdered sugar
1 teaspoon vanilla
2 cups flour
1/4 teaspoon salt
1/2 cup finely chopped shelled pistachios
sifted powdered sugar for rolling
Cream margarine, sugar, and vanilla until fluffy. Sift the flour and salt and stir it into the wet mixture. Mix in the pistachios. Roll into balls the size of walnuts. Bake on the middle rack of the oven on ungreased baking sheet about 2 inches apart at 400 for 8-10 minutes. Cool on baking sheet for 5 minutes. While warm, roll in powdered sugar, shaking off excess. Cool, and roll again in the powdered sugar.
